1 whole chicken
1 cup rice (serve 4 people)
4 stalk coriander
Spring onion
Few slice of ginger
2 inch ginger (grate an juice it)
1 tabespoon garlic
Oil or butter

Ingredients for chilli
6 long red chilli
4 chilli padi
4 clove of garlic
Some ginger
Salt and sugar to taste

Direction to cook the chicken:
Wash the chicken clean. Then stuff in spring onions and ginger.
Put a pot of water to boil. After water boil put in the chicken and cook for 5 minutes then turn off the fire. Leave the chicken in the pot for an hour. Then take it and put in ice water.

Direction to cook the rice:
Wash the rice then let it dry. Grate 2 inch of ginger and juice it. Heat the wok and you can use either oil or  if you want it to taste more fragrant use butter. Add in garlic, then when the garlic turn light brown stir  in the rice with the ginger juice. Then put it in the rice cooker and add in the soup from the chicken that you boil just now.  Add in the 4 stalk of coriander roots to cook with the rice. Cook the rice in the rice cooker as per normal.

Direction to the chilli sauce for dipping the chicken:
Cut the chilli and take out the seed. Same goes for the chilli padi. Peel the garlic. Put the chilli and garlic in the food processor and blitz until fine. The ginger use a ginger grater to make into ginger paste. Then add in the food processor to mix in with the chilli. Add in salt and sugar to taste.

Tip: after plating the chicken drizzle some vinegar, sesame oil and soy sauce over the chicken.
